BEI DER Gefriertrocknung ERHALTEN DIE STRUKTUR, DER GESCHMACK, DAS AROMA UND BIS ZU 95-98 % DER VITAMINE UND MINERALIEN DES PRODUKTS, DESHALB SIND GEFRIERGETROCKNETE OBST UND GEMÜSE GESUND. DURCH GEFRIERTROCKNUNG ODER SUBLIMIERUNG DES PRODUKTS WIRD IHM DIE FEUCHTIGKEIT ENTFERNT, DAS EIS VERDAMPFT UND DEN FLÜSSIGEN ZUSTAND DES WASSERS AUSGESCHLOSSEN.
Andererseits basiert das bekannte Heißtrocknungsverfahren ebenfalls auf dem Prinzip, Wasser aus dem Produkt zu entfernen, indem das Produkt nur auf 120°C erhitzt wird, was das Aussehen, den Geschmack, die Struktur des Produkts irreversibel schädigt und vor allem - die Menge an Vitaminen ist im Vergleich zu frischem auf 20-30 % reduziert.
